I do it all the time and freeze the leftovers. It is super easy and really delicious!
Stew beef barley soup
(10 servings)
1 tablespoon vegetable oil
1 pound beef stew, cut into small (1 "pieces)
1 teaspoon chopped garlic (optional)
1 (4 oz) sliced mushrooms (optional)
2 medium onions, coarsely chopped
3 carrots, cut into slices (3 / 4 "thick slices) or approx. 24 carrots, cut into slices
3 sticks celery, sliced
1 can (28 oz size) diced tomatoes with liquid
2 (14.5 oz) cans beef broth
2 (14.5 oz) cans vegetable broth 1 box + extra for the additional broth, if desired
1 / 3 cup flour, medium (optional)
In a large pot, heat the oil over medium heat. Brown meat, add the garlic (if desired) the meat is browning. With salt and pepper, if desired.
Add onions, carrots, celery, tomatoes, 4 cans of broth to a boil.
Reduce heat to a gentle bubble cover, and simmer for 1 ½ to 2 hours or until soft to the meat (which can set out with a spoon).Stir gently from time to time, do not move to avoid too strong to break the vegetables.
If you also barley and simmer another 60 minutes, lightly stirring every 15 minutes, until barley is done.
Store leftovers in airtight container. Can be frozen.
